Ingredients
Gather the following ingredients:
1 broccoli (approximately 1 pound)
1 carrot, peeled and diced
1 bell pepper, cut into cubes
1 tomato, diced
1 onion, diced
5.5 ounces of Mozzarella cheese
2-3 eggs
3 tablespoons of flour
A drizzle of extra virgin olive oil
Dried garlic
Salt and pepper to taste
Preparation Process
Boiling the Broccoli
Start by removing the broccoli florets from the stem and cutting them into smaller pieces.
Place the florets in a pan with salted water and bring to a boil. Let them cook for about 5 minutes until tender.
Drain the broccoli and let it cool.
Making the Flan Mixture
In a bowl, combine the cooked broccoli with the eggs. Use an immersion blender to create a smooth puree.
Add the flour to the mixture and stir until well combined.
Sauteing the Vegetables
Heat a drizzle of olive oil in a non-stick pan.
Add the diced onion and cook until translucent.
Add the diced carrot, bell pepper, and tomato. Season with salt, pepper, and dried garlic. Cook until the vegetables are tender.
Assembling and Baking
Grease a square glass baking dish with olive oil.
Spread the broccoli puree evenly in the dish.
Top with the sautéed vegetables and grated cheese.
Bake in a preheated oven at 180°C for 20 minutes, or until golden brown.
