Preparation:

Preheat the oven to 200 °C (390 °F) top and bottom heat. Grease a springform pan (about 26 cm / 10 inches in diameter) or line it with parchment paper. Put all the ingredients for the dough – flour, pudding powder, butter, sugar, egg, and a pinch of baking powder – into a bowl and knead with a mixer or by hand until you get a smooth dough.

Press the dough into the pan, making sure to pull up the edges about 2–3 cm (about 1 inch) high. Thoroughly wash the plums, halve them, remove the pits, and arrange them tightly on the dough base. Make the streusel by mixing flour, butter, sugar, vanilla sugar, and cinnamon, then evenly sprinkle the streusel over the plums.

Bake the cake on the middle rack in the preheated oven for about 30 minutes until the streusel turns a nice golden brown.
Then, let the cake rest in the pan for 10 minutes. Carefully remove the ring and let the cake cool completely on a wire rack. Serve it plain or enhance it with whipped cream or a scoop of vanilla ice cream if you like.
