Add the lump crab meat, ½ cup of breadcrumbs, green onions, red bell pepper, and parsley to the bowl. Using a spatula or your hands, fold the ingredients together just until combined. Be careful not to overmix—preserving the lumps of crab is essential for the best texture.
3. Form and Coat the Patties
Divide the mixture and shape it into 6 equal patties, about 1-inch thick. Place the remaining ½ cup of breadcrumbs on a plate. Lightly dredge each patty in the breadcrumbs, coating both sides evenly.
4. Chill to Firm Up
Place the breaded crab cakes on a plate or baking sheet and refrigerate for at least 15-20 minutes. This critical step helps them hold their shape during cooking.
5. Pan-Fry to Perfection
In a large skillet over medium heat, melt the butter. Once the butter is hot and foaming, add the crab cakes in a single layer (work in batches if needed to avoid crowding the pan).
Cook for 3-4 minutes per side, or until a deep golden brown and crispy on both sides.
6. Serve Immediately
